Krause Haus Spice Blend

In a spice blender (a well cleaned coffee grinder will work just as well), add the following:

2 bay leaves

2 tablespoons celery seeds and 1 teaspoon salt

1/2 tablespoon mustard seeds

2 teaspoons peppercorns

2 ounce piece fresh ginger, peeled

2 teaspoons smoked Hungarian paprika

1 teaspoon ground nutmeg

1 teaspoon whole cloves

1 teaspoon whole allspice berries

1⁄2 teaspoon red pepper flakes

1⁄2 teaspoon ground mace

1⁄2 teaspoon ground cardamom

1⁄4 teaspoon ground Saigon or Vietnamese cinnamon (do not use the cheap variety – it is not real cinnamon and is too bitter)


Store in a glass jar with a tight lid, label it with the date, and tuck it in a cool, dark pantry. Good for six months, though it’s so tasty, you’ll need to plan on making it more often than twice a year.
