Mashed potato soup with cheese quesadillas and guacamole salad

Make mashed potatoes with three large skinned Russet potatoes and thin with milk, sour cream, and butter. Shred gouda and stir in. Add minced parsley. If you like a bacon-y flavor I recommend adding bacon drippings and finely minced bacon. Whip until smooth. I recommend having this with cheese quesadillas, guacamole salad, and blue corn chips for the tastiest lunch ever!
